I don't want to sound too stupid here, but what does this term mean? I've seen applications listed as having a carbonized version. Does this mean it's been updated to run under OS X ? Thanks.

Yes it does - Carbon and Cocoa run under OS X natively.

difference between cocoa and carbon? read a few articles and you'll be good to go:
