Does it play only bought iTunes songs or does it play anything (Xfactor, stuff from my own CDs)?
Also, does an iPod/iPod Mini/Shuffle use iTunes to add and subtract music to them or does it have it's own program?

All of the iPods use iTunes to manage their music. The iPods will play pretty much any audio file that plays in iTunes... so yes you can rip your CDs and you are not limited to music bought at the iTunes Music Store.
You can see exactly what formats each iPod supports at
http://www.apple.com/ipod/specs.html
just scroll down to Audio support. The formats vary slightly between the iPods. Basically the shuffle supports MP3 and AAC with bit rates as low as 8Kb/s where the others only support down to 16Kb/s, and the Shuffle does not support AIFF or Apple Lossless.
