Ok, after ripping all of myCDs and porting them over to my iPod, I removed the several Gigs of music from my HD. I don't listen to music much on my system.
Anyway, I bought a new disc, ripped that. Plugged in my iPod. And now I've just got that disc on my iPod, none of my several Gigs of music is there anymore.

So, my question is this. Before I begin to re-rip all my discs, how can I add new music to the iPod, without having to keep copies of whats on the iPod on my computer?

When you connect the iPod go to the iTunes iPod preferences, the little group of widgets in the right hand corner (the left one), and select "update the playlists only" not the whole library. Just compile playlists of your whole library as it stands.
You can use Crockpod, Xpod or any other app to drag all your music off the iPod to the desktop in future. Then just add this back to your iTunes library and update your iPod with your new music, much more cumbersome than updating playlists only.
