I need to manage my music, movies and apps without iTunes (at this point I do not want to see any silly questions why I do not like to use iTunes).
There should be a way to use your iPod as external drive, but it will not show up anywhere outside iTunes. I wonder if this feature is dropped from new systems.
Or maybe someone can tell me how to put a .mov into iPod without any syncing?

You are asking two separate and completely different things here.

First off, I don't think there is a way with a jailbroken Touch/iPhone app that will play your manually setup media. If that is a highly sought after feature you may want to look into different smartphones. I've read about VLC Player (http://www.afterdawn.com/news/archive/14370.cfm)coming to jailbroken OS X v2.x, but I've heard of no official release.

The App Store app AirSharing (http://phobos.apple.com/WebObjects/MZStore.woa/wa/viewSoftware?id=289943355&mt=8) will allow you to use your device as an external drive when connected to a wireless LAN. Until recently it was free of charge, now it's $7.

Perhaps DiskAid, http://www.digidna.net/diskaid/, will help with transfers?
(I don't own an iPod Touch. I haven't tried this app.)

So it seems that Apple has dropped this feature.
You can do it though by installing Netatalk on your iThing trough Cyndia. And BANG there it is your iThing in your Finder window.
